In full autumn weather this morning I give you a recipe to prepare the barley soup with mushrooms, peas and radicchio a complete, substantial and colorful dish. I usually buy pearl spelled, but I accepted your suggestion to try a soup with barley and I really enjoyed it. The recipe comes from one of my mum's usual magazines that she always takes care to keep for me and then leaf through them together and decide on the Thursday dinner and it was much appreciated, especially by her who then with the leftover barley bag, the 'has prepared again the next day;) If you are looking for ideas on what to prepare for today and you want a hot, healthy and tasty first course, prepare this barley soup with mushrooms, peas and radicchio and it will win you over;) kiss and have a nice day

Method

How to make barley soup with mushrooms and peas

Soak the barley in a bowl with cold water for an hour
Slice the onion into a veil and sauté it in a saucepan with the oil, add the mushrooms, add salt and pepper and cook for about ten minutes
Rinse the barley and add it to the saucepan, stir and cook for a couple of minutes

Cover with the boiling broth and cook for 10 minutes, add the peas, season with salt and pepper and add broth as it dries

Wash the radicchio and add it to the barley soup

Stir and bring the soup to cooking

Once ready, serve the barley soup with mushrooms and peas with warm croutons
